GALICIAN EMPANADA RECIPE

450 g of strong flour | Accessory remover |
90 g lard | Blade accessory |

30 g fresh yeast | |
100 ml olive oil | |
50 ml water | |
70 g green pepper | |
80 g onion | |
2 boiled eggs | |
70 g yellow pepper | |
50 ml white wine | |
200 g tuna in olive oil | |
70 g red pepper | |
Pepper | |
Salt |
If you prefer, you can replace the lard with the same amount of butter.
ELABORATION
Kneading.

- We mount the blade accessory on our Küken food processor.
- Add 50 ml of white wine, 50 ml of water, 50 ml of olive oil and 90 g of lard.
Mix for 1 minute at 37ºC and speed 2.

- Add one egg and 30 g of crumbled fresh yeast.
Mix for 5 seconds on speed 4.

- Add 450 g of flour and a small spoonful of salt.
Knead for 2 minutes on speed 2.

- Leave the dough to rest in the mixing bowl for 45 minutes. This will allow it to double in volume.
Once the dough has been prepared, once it has risen and rested, it can be frozen for future preparations.
Preparation of empanada filling.

- We make two parts with the dough and stretch it into the shape of the mould where we will make the empanada. One part will be the base and the other will cover the filling.
- We put the dough aside and start with the filling of the pie.
- We mount the stirring attachment on our Küken robot.
- Add 50 ml of olive oil
- 80 g onion cut into slices
- Cut 70 g of red pepper, 70 g of green pepper and 70 g of yellow pepper into medium pieces and season to taste with salt and pepper.
Cook for 10 minutes at 120ºC and speed 1.

- Place the sofrito in the base of the empanada, but not all the way to the edge so that we can close it properly afterwards.
- Add the two boiled eggs, in medium-sized pieces, and the crumbled tuna, well distributed throughout the base.
- Cover with the other half of the dough, fold the edges tightly so that the filling does not leak out, and brush the top with beaten egg.
- Bake for 30 minutes at 200ºC, it is important to have the oven preheated.
Our delicious homemade empanadas are ready.
