Meat stuffed aubergines recipe with food processor

This recipe for meat-stuffed aubergines is so easy to prepare with the Küken Kitchen Robot, they're great for dinner or lunch any day of the week.

It is also a very healthy dish in which we eat vegetables, meat and dairy products at the same time, a real marvel.

What are the benefits of aubergines?

  1. Stimulates liver and gall bladder function, promoting the digestion of fats.
  2. It contains antioxidant substances that help to prevent many diseases.

However, as a tip, aubergines should be ripe, as some studies suggest that unripe aubergines can cause migraines in people prone to migraines.

AUBERGINES STUFFED WITH MEAT RECIPE

To prepare this recipe we can choose the variety of aubergine we prefer, either purple or striped, it is indistinct.

In the same way we can use the meat filling as we like; pork, beef, chicken, turkey, mixed.

INGREDIENTSKüken ACCESSORIES

250 g minced meat to tasteDeep steam tray
150 g green pepper
100 g onion
1 clove of garlic
Cheese for gratin
50 ml olive oil
Pepper
50 ml white wine
Salt
Oregano

If we want our aubergine recipe to be vegan, we can use seitan or texturised soya, and instead of cheese made with milk, we can use some of the vegan options that are increasingly available in shops.

ELABORATION

    • Cut the aubergines in half and hollow them out, reserving their flesh in a bowl, leaving about half a centimetre around them.
    • Add 500 ml of water to the mixing bowl of your Küken food processor.
    • Place the deep steam tray on top of the robot and place the aubergine halves face down. Put the lid on.

Steam for 15 minutes at 120ºC.

    • Carefully remove the aubergines and place them face up in an ovenproof dish.
    • Remove the steam tray, remove the cooking water from inside the mixing bowl and insert the stirring attachment.
    • Add 50 ml of olive oil.

Heat the oil for 2 minutes at 120ºC and speed 1.

    • Add 100 g of peeled onion in medium pieces, 150 g of washed green pepper, also in medium pieces, and the peeled and chopped garlic clove.

Cook for 10 minutes at 120ºC and speed 1.

    • Add 250 g of minced meat and the inside of the aubergines in medium pieces. Season to taste with salt and pepper.

Cook for 10 minutes at 120ºC and speed 1.

    • Without removing the lid, add 50 ml of white wine through the filler hole, leaving it open so that the alcohol can evaporate in the next step.

Cook for 10 minutes at 120ºC and speed 1.

    • Place the stewed meat in a bowl and fill the aubergines with it. Add the grated cheese on top and sprinkle with oregano to taste.
    • Bake the aubergines in the oven until the cheese is melted and golden brown. Approximately 10 minutes at 200ºC with the grill on.
